An organic tea log Matcha ? Here is the recipe for 4 people
Ingredients to make the powdered biscuit matcha organic
- 2 eggs
- 62g powdered sugar
- 62g flour
- 2 to 3 teaspoons of powder matcha organic.
We obviously recommend our organic green tea from Japan. - ½ teaspoon baking powder
- 1 pinch of salt
To prepare the biscuit matcha
Start by separating the whites from the yolks in two different salad bowls. In the first, add a pinch of salt and beat the egg whites until stiff. In the second, add the powdered sugar and whisk the yolks until the mixture turns white. Incorporate the egg yolk mixture into the egg whites and mix gently.
In this same salad bowl, add the flour and the powder matcha sifting well and mixing until the dough is homogeneous. Then pour it onto a baking tray covered with baking paper. Spread it evenly and bake at 150°C for 20 minutes. The cookie matcha is ready.

Ingredients for frozen mousse
- 2 leaves of gelatin
- 150g fresh cheese (Philadelphia or St Moret type)
- Yellow lemon zest
- 20cl of liquid cream 35% fat
- 115g egg yolks
- 1 drop of green food coloring
To prepare the frozen mousse
- Start by soaking the gelatin leaves in a bowl of cold water.
- In a salad bowl, separate the whites from the yolks, keeping only the yolks. Then beat them until they foam. In another container, melt the white chocolate in a bain-marie until it becomes very liquid, then pour it into the egg yolks. Whisk this mixture quickly until it forms a ribbon.
- In another salad bowl, mix the cream cheese with a few lemon zests. Remove the gelatin leaves from the water and heat them for a few seconds in the microwave before mixing them with the cream cheese. Then pour the egg yolk mixture into the cream cheese preparation and mix well.
- Separately, whip the liquid cream into whipped cream, then add the cream cheese mixture. Mix gently, then add 1 drop of green food coloring and mix again.
Dressage
In the log mold, place a decorative mat if you wish. Then pour in the mousse, spreading it well so that it covers all the edges. Finally, place the cookie matcha cut beforehand to the dimensions of the mold. All you have to do is place the log in the freezer for at least 12 hours.
