Cinnamon is an evergreen tree that requires a
lot of sun. Its roots and leaves are edible, but it's the bark that's the most
sought-after. Harvested from branches or young shoots in the rainy season, the
top layer is then removed and dried. In the process, the bark naturally curls
around itself to form small tubes, i.e., cinnamon sticks.
